Sun-Dried Tomato Chicken in a Cream Sauce

Hands down my fav dish of all time now.

If I had to pick one meal to eat every day from now on, this would be it.

It’s truly the best dish I’ve pulled off.

The recipe is from EatingWell and is so so yum!

Things I recommend:

  1. Get the best quality of sun-dried tomatoes you can! This is where all the flavor comes up. Really cut them up small too!

  2. Take care to let the sauce simmer and come together. It gets nice and thick + concentrated with flavor if you’re patient.

  3. You’re going to want every bit of that chicken covered with good good. I sliced my chicken breasts into thin, flat cutlets by pressing hard on them with the palm of my hand and using a super sharp knife to slice it horizontally (think like you would cut a bagel!)


These are the powder pink pans I’m using/loving/used in this recipe.

They are safe (no bad Teflon juju here!), durable (I’ve had them for about 6 months), and so dang cuteeee!
