Zucchini Boats

All the yum with none of the bread.

These are SERIOUSLY delicious.

But let’s be honest. They are veggies. Not bread.

If you go into it expecting it to taste like pizza, you’ll be disappointed.

If you go into it craving veggies, you’ll be delighted with lots of flavors and a fun new way to eat them.

This is the recipe I followed!

Things I did different/recommendations:

  1. I used a melon ball tool. Game changer!

  2. It’s all in the sauce! My fav is RAOs. I order a ton at a time and keep stocked up on their Aribatta (spicey lover, what I’d use for this one for extra flavor) and Vodka Sauce (creamy lovers but I prefer this for pastas and chicken dishes).

  3. Used a ton of different toppings – turkey bacon, black olives olives, cilantro, pepper flakes, artichokes!

  4. Would recommend going lower on the zucchini filling and heavier on the cheese so it’s more of an equal ratio.
